20 Cheap Yet Tasty Vegan Meals

Have you recently taken the leap and become vegan? You’re not alone! Many Brits have made the change both this year and last. The movement is growing faster than any of us could have expected. But how can you eat cheap while making the change? Luckily, we’re here for you! Here are 20 awesome vegan recipes that won’t break the bank.

1. Curried Chickpeas

Fancy a little spice in your life? Luckily, one of the tastiest options for vegans or those leading a plant-based lifestyle is a good, old-fashioned curry. A cheap way to bulk out one of these dishes is to use the humble chickpea. We don’t need to tell you that these things are super cheap. (Most supermarkets sell them in tins for around 50p!) Grabbing a tin of them and mixing up a delicious curry sauce makes for a perfect dinner treat.

We’re sticking with the spice theme for this next one. Anyone for soup? A lot of mainstream Mexican style food uses beans, peppers, and spices. That means that you don’t need meat, dairy, or eggs to make it delicious. This particular recipe will cost you next to nothing and warm you up  on long winter nights!

3. Hummus and Grilled Vegetable Pizza

One of the biggest things that vegans have to give up is cheese. That means no more cheddar and pickle sarnies and… worse still… no more pizza. Or does it? Packed full of courgette and aubergine, this particular baked dish is perfect and cheap. Prep it ahead of time for a tasty weeknight meal.

6. Tofu Scramble

Starting my morning of right with some tofu scramble and avocado toast 🥑🥑 With a little @sriracha_fg for extra flavour of course 💕 – – Tofu scramble recipe: – Ingredients: • 200g firm tofu • 1/2 tbsp nutritional yeast • 1 tsp garlic powder • 1/2 tsp paprika • 1/4 tsp salt • 1/4 tsp onion powder • 1/8 tsp turmeric • 1/8 tsp ground black pepper • 1 – 2 tbsp plant milk (I like almond, rice or soy) – Method: • Crumble tofu into a non stick frying pan and cook over a medium heat for a few minutes. If your tofu is sticking, add a little water or oil. • Add all other ingredients along with a little more water as the seasonings will dry the pan out. • Continue to cook on a medium heat for another 5 minutes or so (add more water as needed to prevent sticking). • Have a taste to see if you like the level of seasoning and add whatever you think it needs. • Add in plant milk and combine. You want the mixture to look a little 'wetter' that you would prefer to eat it at this point. • Continue to cook for a couple of minutes or until your scramble has reached the consistency you like. • You can add however much of whatever seasonings you like to your scramble, this is just what I like. You can also add other veggies such as mushrooms, spinach, tomatoes etc. This is just a basic recipe. – – Guacamole recipe: – Ingredients: – • 1 medium avocado (mashed) • 1 medium tomato – seeds removed (finely chopped) • 15g red onion • Salt • Ground black pepper • Lemon/lime juice (optional) • Fresh coriander (finely chopped) (optional) – Method: – • Mix avocado, tomato & red onion • Taste and add salt, pepper, lemon/lime juice and coriander to taste.
